A delicious brown rice salad great for summer meals

Recipe Ingredients for Brown Rice Salad

3 cup Rice, Brown, Medium-grain, Cooked
4 oz Feta Cheese
8 oz Bell Pepper Green
1/2 cup, chopped Onions
1/2 cup slices Cucumber
12 oz. black olives, diced
1/4 cup Olive Oil
2 tbsp White Wine Vinegar, Organic
1 clove Garlic
1 dash Pepper, Black

Recipe Directions for Brown Rice Salad

  1. Cook rice according to package directions

  2. Mix oil, vinegar, garlic, and black pepper and let sit so flavors get acquainted.

  3. Chop the bell pepper, sweet onion, and cucumber

  4. Mix the cooled cooked rice, feta, peppers, onion, and cucumber. Add the dressing sparingly, stirring every so often. You might not need all of it and adding too much can make it soggy. Let the salad chill a while before serving.

  5. Serve on top of lettuce leaves for a tasty crunch!
