Brown rice & vegetables with lemon vinaigrette

Recipe Ingredients for Brown Rice Salad

3.5 cup Rice, Brown, Long-grain, Cooked
1 cup chopped Green Onions
2 cup, diced Celery
1 cup, chopped Peppers, Sweet, Red
0.25 cup Lemon Juice
1 tsp Garlic
1 tbsp Honey, Strained Or Extracted
1 tsp Kosher Salt
1 tsp Pepper, Black
2 oz Extra Virgin Olive Oil

Recipe Directions for Brown Rice Salad

  1. Combine lemon juice, garlic, honey, salt, pepper and oil in a jar, and shake well.

  2. Pour lemon vinaigrett over freshly cooked rice and toss. Add green onions, celery, and bell pepper. Set aside for 30 minutes, tossing a couple of times.

  3. If you don't plan to serve the salad the same day, cover and refrigerate.
