Combination of grains, beans, vegetables, and fruit. Can be served on top of a bed of field greens.

Recipe Ingredients for Brown Rice Salad

3 cups cooked brown rice
15 ounce pinto beans, rinsed and drained
15 ounce corn, drained
1 red bell pepper, seeded and chopped
4 green onions, chopped
1/4 cup, raisens
1 cup cilantro, chopped
1/4 cup balsamic vinegar

Recipe Directions for Brown Rice Salad

  1. Toss all the ingredients together in a large bowl.

  2. Season with pepper. You can add sprinkled walnuts over the salad before serving.

  3. Brown rice is best made with chicken broth.
