Mediterranean flavored brown rice salad. Good cold or hot.

Recipe Ingredients for Brown Rice Salad

1 cup brown rice
2 tbsp capers
1 tbsp black olives, chopped
1/2 red bell pepper, chopped
1/3 cup celery, diced

Recipe Directions for Brown Rice Salad

  1. Add rice and 2 cups water to a medium saucepan, and turn to high. When it begins to boil, turn down very low to a simmer and cover tightly. Boil for 40 to 50 minutes or until rice is done.

  2. Mix remaining ingredients in with rice.

  3. Serve hot or cold.
