Recipe Ingredients for Brown Rice Risotto-style with Greens

1 1/2 cups brown rice, dry
2 1/4 cups water
1 pound collard greens, raw
2 cups water
1 tablespoon olive oil
2 leeks, chopped
1 clove garlic, pureed
1/2 teaspoon salt
1 tablespoon butter
1 ounce parmesan cheese, grated
1 teaspoon black pepper

Recipe Directions for Brown Rice Risotto-style with Greens

  1. Soak brown rice in 2 1/4 cup water for several hours, then bring to a boil and cook on low heat for about 40 minutes until tender and water is absorbed.

  2. Meanwhile, in a large pot bring 2 cups of water to a boil, add greens, cover, and cook until wilted, about 1 minute.

  3. Pour greens through a strainer, capturing the liquid. Press out the moisture from the greens, set aside.

  4. Chop the leeks and saute them in the same pot in 1 tablespoon olive oil. Add the garlic and heat briefly.

  5. Add the cooked rice, the reserved greens (coarsely chopped), the reserved greens cooking water and heat until the liquid is absorbed.

  6. Off heat, add the butter, pepper, and Parmesan cheese. Stir well and serve.
