Brown Rice Risotto Recipe

More just baked rice than risotto, but cooking it with stock does make the rice taste nicer. My husband, who hates brown rice, loves this.

Recipe Ingredients for brown rice risotto

45 ml sunflower oil
1 tsp turmeric
2 onions
225 g brown rice

Recipe Directions for brown rice risotto

  1. Chop onions and fry in oil together with rice and turmeric in a flame-proof casserole dish.

  2. Add 600ml vegetable stock (I used water with marmite added. For extra flavour, substitute some of the stock with half a glass of white wine).

  3. Cover well and bake in 170'c oven for about an hour.
