Original recipe found on Allrecipe.com, changed it to include less sugar. Original recipe was also a little runny, so less milk could be added as well. Otherwise, it was delicious. Enjoy!

Recipe Ingredients for Brown Rice Pudding

1 cup (Minute Rice) Brown Rice
1 cup water
14 oz (Thai Kitchen) Lite Coconut Milk
5 oz (Meijer) Fat Free Evaporated Milk
1/4 cup Splenda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 tbsp molasses
1/2 tsp almond extract
1 egg white

Recipe Directions for Brown Rice Pudding

  1. Cook rice as per instructions on box.

  2. Bring coconut milk and evaporated milk to a simmer in a large saucepan over medium-low heat. Stir the sugar substitute into the mixture until dissolved. Add cinnamon, nutmeg, ginger and molasses to the mixture and mix well.

  3. Temper the egg by stirring about 2 tablespoons of coconut mixture into the eggs; add mixture to saucepan along with the almond extract and cooked rice. Reduce heat to low and simmer until the mixture thickens, about 45 minutes.
