Notes for next time: carrots became mushy and mushrooms' flavor diminished, basically being boiled/steamed for 45 minutes. Next time, cook them separately and mix them in at the end. Cook the mushroom with anise for sure, as it helps bring out the mushroom flavor. Also, be sure to use only 2 cups of borth (2.33 was far too much)

Recipe Ingredients for Brown Rice Pilaf with Shiitake, Carrot, Cashew, Apricot

120 g carrot
2 oz shiitake mushrooms
2 tsp butter (sage compound butter)
2 tsp olive oil
1 cup brown rice (jasmine rice)
2 cups low sodium vegetable broth
50 g cashews
50 g dried apricots
1 g anise seed

Recipe Directions for Brown Rice Pilaf with Shiitake, Carrot, Cashew, Apricot

  1. Slice the carrot into thin strips. Slice shiitake mushroom into smallish pieces, depending on cap size.

  2. In a saucepan, lightly fry the carrot and mushroom in the butter and olive oil.

  3. When lightly fried, add the vegetable broth and rice and bring to a boil, then cover and simmer until broth is absorbed ? about 45 minutes?.

  4. After rice is done, add chopped apricots and split cashews. Fluff, then let sit for five minutes.

  5. Serve!
