Recipe Ingredients for Brown rice pilaf

1 cup brown rice
1 carrot
1 medium onion
2 tablespoons olive oil
1/2 cup frozen peas

Recipe Directions for Brown rice pilaf

Cook brown rice according to package diretions. Saute onion and grated carrot in olive oil until soft. Add frozen peas during last few minute of cooking; cover and steam briefly. Add cooked brown rice and toss to combine. I serve this topped with 1 cup of Progresso lentil soup.
