Brown Rice with veggies and raisins

Recipe Ingredients for Brown Rice Pilaf

1 1/2 cup brown rice
3 cups no salt added chicken broth
1 small onion, chopped
1 cup mushrooms, sliced
1/4 cup raisins
1 tbs olive oil
1/2 tsp salt
1 tsp cumin
1 tsp coriander

Recipe Directions for Brown Rice Pilaf

  1. Saute onion in oil until barely soft

  2. Add mushrooms, cook another 2 minutes

  3. Add rice, stir to coat with oil

  4. Add raisins, broth, salt, cumin and coriander, stir to mix

  5. Cook for 40 to 50 minutes until rice has absorbed liquid.
