Rice pilaf made with brown rice, mushrooms, and caramelized shallots.

Recipe Ingredients for Brown Rice Pilaf

3/4 cup brown rice
2 tbls shallots, chopped
8 mushrooms, chopped
1/2 oz whole wheat pasta
1 tsp extra virgin olive oil
1 1/2 cups chicken broth

Recipe Directions for Brown Rice Pilaf

Caramelize shallots in olive oil over low heat for about 20 minutes. Add mushrooms and saute for another 5 minutes. Break pasta into small pieces about 1/2 inch long and add to shallots and mushrooms along with rice. Saute until rice and pasta are lightly toasted. Add chicken broth, bring to a boil then reduce heat and simmer for about 40 minutes or until all of the liquid is absorped.
