Recipe Ingredients for Brown Rice Muffins

13/20 cups brown rice
3 eggs
1/2 cup applesauce
2 tbsp molasses
2 tbsp rice flour
1/4 cup milk
1 tsp vanilla
1 tsp cinnamon
1 tsp nutmeg

Recipe Directions for Brown Rice Muffins

  1. actually use 2 cups cooked brown rice - chg'd qty in list above to get the calories right.

  2. Heat oven to 325 degrees. Lightly grease muffin tin

  3. Combine all ingredeints in a blender. Fill prepared muffin tin 1/4 full

  4. Back 15 min or until centers firm (test w/toothpick). Muffins will not rise much.

  5. Let cool thoroughly, then wr4ap and take along for great ride food. Makes 10 muffins.

  6. NOTE: Add milk slowly, starting with 1/4 cup. More milk may be needed if the rice is dry from being in the fridge.
