Healthy, filling salad that is great for BBQ's or lunches

Recipe Ingredients for Brown Rice Lentil Taco Salad

1 cup brown rice
2 1/2 cups water
1 oxo chicken Stock Cubes
19 oz lentils, drained and rinsed
1/2 large tomato or 1 roma tomato
1/2 green pepper
1/3 cup finely diced red onion
3 cloves garlic
2 cups spinach leaves
2 tsp chili powder
1/2 tsp cumin powder
1/8 tsp cayenne powder

Recipe Directions for Brown Rice Lentil Taco Salad

  1. cook rice with oxo cube

  2. meanwhile, prepare, dice all ingredients.

  3. when rice is done, mixx all ingredients together and chill for about 2 hours.

  4. can be eaten warm as well, but is better cold
