Recipe Ingredients for Brown Rice, Lentil and Shrimp Salad

1 cup brown rice
2 cups water
8 oz shrimp, precooked salad shrimp
1 cup lentils
1 tbsp olive oil
1 tsp lemon juice
1 carrot
1 cup broccoli
1/2 onion

Recipe Directions for Brown Rice, Lentil and Shrimp Salad

  1. Boil rice and lentils in water for 40 minutes or until soft. Cool.

  2. Sautee onion, finely minced, if preferred, or use raw.

  3. Chop carrots and broccoli (raw or blanched, to taste).

  4. Mix all ingredients in a bowl. Season to taste with salt and pepper, herbs, or anything else you like! Also good with feta cheese.
