Based on a recipe on Eating Well. I replaced sherry vinegar with white wine vinegar, and shallots with finely chopped onion (to which I added a little vinegar and salt, and let it still for about half an hour).

Recipe Ingredients for Brown Rice and Lentil Salad

1 cup Rice, Brown, Medium-grain, Cooked
1.5 cup Lentils, Mature Seeds
1 medium Carrots
1 small Onions
1 tbsp Parsley
8 grams Extra Virgin Olive Oil
3 tsp Classic Dijon Mustard
0.25 tsp Paprika
0.25 tsp Pepper, Black
0.25 tsp Salt, Table
1 tbsp White Wine Vinegar, Organic

Recipe Directions for Brown Rice and Lentil Salad

Cook the brown rice and lthe lentils ready. Dice the carrots, finely chop the onion and the parsley. Prepare dressing: mix together mustard, oil, paprika, pepper and salt. Toss everything.
