A delicious, healthy, hearty grain and lentil casserole that will be delicious for days.

Recipe Ingredients for Brown rice/ lentil casserole

2 tsp. olive oil
1 large leek, chopped
3 cloves garlic
1 carrots, chopped
2 mushrooms
1 stalk celery
1 tomato
2 T soy sauce
2 cups brown rice
1 1/2 cups lentils
6 cups boiling water

Recipe Directions for Brown rice/ lentil casserole

  1. Heat oil in large heavy pot

  2. Add onion or leek, garlic, carrots, celery

  3. saute until vegetables are tender and slightly browned

  4. Add soy sauce

  5. Add rice and lentils, stirring well to mix

  6. Add chopped tomato

  7. Add boiling water, reduce heat, cover and cook until all the water has been absorbed.
