As a native Californian, fruits and nuts are in my blood. Here's a fruity, nutty, healthy alternative to the white rice side dish.

Recipe Ingredients for Brown Rice from the Land of Fruits and Nuts

4 cups water
1 1/2 cups brown rice
3 tbsp margarine
1/4 cup mixed nuts, chopped
1/4 cup cherry, dried and chopped
1/4 cup dried apricots, chopped
1/4 cup raisins
1/4 cup chickpeas
1/4 teaspoon grated nutmeg

Recipe Directions for Brown Rice from the Land of Fruits and Nuts

  1. Soak chickpeas in water overnight.

  2. Bring water to a boil in a heavy medium saucepan. Add rice, then reduce heat to low and simmer, uncovered, until rice is tender, about 40 minutes. Drain in a sieve.

  3. At the same time, drain chickpeas and bring a second pot of water to a boil. Reduce to a simmer and add chickpeas, simmering for 40-50 minutes, or until soft. Toss dried fruit in for about 5 minutes at the end. Drain.

  4. Heat margarine in a large heavy skillet over medium heat until melted. Add nuts and cook, stirring, until margarine and nuts are golden brown, about 4 minutes.

  5. Add rice, fruit, chickpeas, and nutmeg to skillet and toss to coat.
