Brown Rice with kale and green beans

Recipe Ingredients for Brown Rice with Kale & Green Beans

3/4 cup brown rice
2 cups water
1 potato, sweet
1 cup green beans, cooked
2 tablespoons parsley, chopped
1 tablespoon tarragon
1 tablespoons olive oil
2 cups Kale, steamed

Recipe Directions for Brown Rice with Kale & Green Beans

  1. Cook rice in water for 30-40 minutes

  2. Peel and cut into chucks the sweet potato, coat with oil and roast in shallow pan on 400F for 30 minutes.

  3. Steam green beans & kale for 15 minutes.

  4. Combine rice, squash, beans, kale, parsley, tarragon and remaining oil in a bowl.

  5. Serve
