Recipe Ingredients for Brown Rice Italian Medley

1 cup Brown Rice
1 tbsp olive oil
8 oz asparagus
1/2 cup red pepper, diced
1/4 cup pine nuts
1/4 cup Parmesan cheese, shredded

Recipe Directions for Brown Rice Italian Medley

  1. Prepare rice per package directions

  2. Heat oil in a large skillet over medium heat. Add asparagus and peppers and saute 5 minues or until crisp tender. Stir in pine nuts and rice and heat through. Season with salt and pepper if desired. Serve topped with parmesan cheese.
