This is an ideal way to use up leftover rice. Any vegies can be added, but the ones below give it that authentic fried rice flavour. This dish gets better the next day so make a lot and have it for lunch

Recipe Ingredients for Brown Rice Fried Rice

4 eggs, whole
2 tsp mirin
1 tsp pepper
4 tbsp olive oil
3 spring onions
2 garlic cloves
2 tsp ginger
2 oz Coriander
5 g (5g g) Chilli
2 stalk,+large+11"-12"+long celery
1 cup corn, canned
1 cup frozen peas
1 tbsp fish sauce
1 tbsp soy sauce
2 tsp sesame oil
1 oz Coriander
1 1/2 cup brown rice

Recipe Directions for Brown Rice Fried Rice

Method - Whisk eggs with a little mirin and seasoning. Pour batter into a pan with half the oil. Brown, flip, then roll up and slice. Set aside. Heat the rest of the oil in a wok or large skillet then add the white parts of the spring onions, garlic, ginger, coriander root and chilli and stir-fry for a minute. Add the anchovies now if using (they dissolve leaving a depth of flavour second to none). Toss in all the vegies and sauté until almost soft. Now add the sauces and sesame oil and stir. Next add the rice and stir to combine with the herbs and green parts of the spring onions. Gently fold through the egg and adjust seasoning. This rice is better over the next day or two once the favours have got to know each other. Serve hot or room temperature.
