Recipe Ingredients for Brown Rice, Chicken, and Cilantro Salad

3 tablespoons soy sauce
9 ounces boneless, skinless chicken breast
3/4 teaspoon toasted sesame oil
3 cups cooked brown rice
2 cups bok choy
1/2 cup cilantro
1 tablespoon toasted sesame seeds

Recipe Directions for Brown Rice, Chicken, and Cilantro Salad

  1. Combine water and soy sauce in a medium saucepan over medium-high heat.

  2. Add chicken.

  3. Cook covered for 4 minutes.

  4. Stir in sesame oil. Let cool.

  5. Combine rice, bok choy, cilantro and sesame seeds in a bowl toss in chicken and juices,

  6. Refrigerate until ready to serve.
