Brown Rice with Broccoli, cheese and walnuts

Recipe Ingredients for Brown Rice with Broccoli, Cheese and Walnuts

1/2 cup chopped walnuts
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 cup brown rice
2 cups vegetable broth
1 pound broccoli
1/2 teaspoon salt
6 ounces havarti cheese, shredded

Recipe Directions for Brown Rice with Broccoli, Cheese and Walnuts

  1. Heat toaster oven to 350 F. Place walnuts on a small baking sheet and bake for 6 to 8 minutes or until toasted.

  2. While nuts are toasting, melt butter in a medium saucepan over medium heat. Coarsely chop onion and mince garlic. Cook onion and garlic in olive oil for 3 minutes, stirring occasionally. Add rice and stir. Add broth and bring to a boil. Reduce heat to medium-low, cover, and simmer until liquid is absorbed (about 40 minutes).

  3. While rice is cooking, cut broccoli into florets and slice stems thinly. Place in a microwave-safe casserole dish and sprinkle with salt and pepper. Cover and cook at HIGH power for 5 to 7 minutes or until tender. While broccoli is cooking, shred cheese.

  4. Spoon rice onto serving platter and top with broccoli. Sprinkle walnuts over broccoli and top with cheese.
