Brown rice is cooked with a bit of garlic in a vegetable stock with broccoli, toasted walnuts and shredded Cheddar cheese.

Recipe Ingredients for Brown Rice, Broccoli, Cheese and Walnut Casserole

1/4 cup chopped walnuts
1 tsp olive oil
1 clove minced garlic
1/2 cup uncooked instant brown rice
1/2 cup vegetable broth
1/2 pound fresh broccoli florets
1 salt and pepper to taste
2 tbsp shredded cheddar cheese

Recipe Directions for Brown Rice, Broccoli, Cheese and Walnut Casserole

  1. Preheat oven to 350 degrees F (175 degrees C). Place walnuts on small baking sheet, and bake for 6 to 8 minutes or until toasted.

  2. Cook garlic in oil for 1 minute, stirring frequently. Stir in the rice, add the broth, and bring to a boil. Reduce heat to medium-low. Cover, and simmer until liquid is absorbed, about 7 to 8 minutes.

  3. Place broccoli in a microwave-safe casserole dish, and sprinkle with salt and pepper. Cover, and microwave until tender, about 4 minutes.

  4. Add ingrediants to a casserole dish, top with walnuts and cheese; cover and bake at 350 for 15 - 20 minutes.
