From the Gluten-Free Goddess, modified with different flours.

Recipe Ingredients for Brown Rice Bread

1 oz Yeast
1 tbsp Honey
3/4 cup Organic Brown Rice Flour
3/4 cup Cornmeal, Whole-grain, White
1/2 cup Whole Grain Oat Flour
1/2 cup Quinoa Flour
1/4 cup dry Quinoa Flakes
1 oz Tapioca Starch
3/10 tbsp Xanthan Gum
1 tsp Salt, Table
4 tbsp Oil Olive Extra Virgin
3 large Egg, Whole
3.67 cup (8 fl oz) Water

Recipe Directions for Brown Rice Bread

  1. Proof the yeast with warm (110-115 degrees) water and honey, let it get foamy.

  2. Mix together all dry ingredients.

  3. After yeast has proofed, mix in oil and eggs.

  4. Using a bread machine, pour in wet ingredients, then dry. Set machine to basic or gluten cycle, dark crust and 1.5# loaf. May have to scrape down sides of pan initially.
