Dense, moist brown bread that I made up to get rid of leftover rice. Makes 2 loaves.

Recipe Ingredients for Brown Rice Bread

3 tsp active dry yeast
2 2/3 cups water, warm
5 1/2 cups whole wheat flour
1 cup white flour
4 tbsp white sugar
2 tsp salt
2 cups rolled barley, uncooked
2 cups brown rice, cooked
3/4 cups molasses
1 cup wheat bran
4 tbsp canola oil
1 1/2 tbsp cornmeal

Recipe Directions for Brown Rice Bread

  1. Combine yeast and 1/2 water in a large bowl; mix well.

  2. Add white flour; mix well and let sit 5 minutes.

  3. Dissolve sugar and salt in remaining water.

  4. Add water solution, oats, rice, flaxseed meal, molasses, and 2 tbsp oil; mix well.

  5. Add whole wheat flour 1 cup at a time; mix well.

  6. Knead dough 5 minutes.

  7. Rub dough with 1 tbsp oil; cover and let rise until dough doubles in size, about 1 1/2 hours.

  8. Oil 2 breadpans with remaining oil and sprinkle cornmeal to cover pan.

  9. Punch down dough, form into loaves, and place into the breadpans. Cover and let rise until dough doubles in size, about 1 to 1 1/2 hours.

  10. Bake 40 to 45 minutes at 350 degrees.

  11. Let cool 10 minutes in pans before turning loaves out onto a cooling rack. Let cool at least 1 hour.
