Recipe Ingredients for Brown rice with asparagus

3 cups uncooked brown rice
48 ounces low sodium chicken broth
1 cup water
15 ounces fresh asparagus
1/2 cup minced shallot
5 cloves garlic
5 scallions
1 tbsp fresh chopped thyme
1 tbsp fresh chopped rosemary
1/4 cup fresh chopped parsley
1 tbsp lemon zest
1/4 cup fresh lemon juice
2 tsp kosher salt
1 tsp black pepper
3 tbsp unsalted butter

Recipe Directions for Brown rice with asparagus

In a large pan, over medium heat, melt the butter. Thinly slice the scallions. Cut asparagus into 1 inch pieces. Add scallions, shallot, garlic, and asparagus to the pan. Add salt and pepper. Cook until shallots are transparent (about 5 minutes). Add the rice and mix well. Cook an additional 5-7 minutes stirring occasionally. Slowly stir in the chicken stock and water. Add the lemon zest, lemon juice, thyme, rosemary and parsley and mix well. Bring to a boil, cover and reduce heat to medium to medium low and cook for 25 minutes.
