Recipe Ingredients for Brown Coconut Rice with Cilantro

1 cup Rice, Brown, Medium-grain
8 oz Lite
1.25 cup (8 fl oz) Water
1 clove Garlic
0.25 tsp Salt, Table
2 tbsp Coconut
1/4 cup Cilantro

Recipe Directions for Brown Coconut Rice with Cilantro

In a medium sized heavy pot , add coconut milk, rice, water, garic, salt and coconut, bring to a bowl over medium heat. Reduce heat to low, cover and simmer until all liquid evaporates, about 40-45 minutes. Remove from heat, keep covered for 10 more minutes. Fluff with a fork; toss with cilantro.
