Brown Bag Burritos Recipe

Called "brown bag" because they are a make-ahead, grab & go type thing that you can pack in your lunch. The tortillas I used are the Old El Paso brand burrito-sized ones, which are a little smaller than traditional burrito wraps. They come in packs of eight, and the recipe is enough to make 16 total.

Recipe Ingredients for Brown Bag Burritos

1 lb. lean ground beef
15 ounces canned pinto beans, rinsed and drained (or cook your own dried)
1 cup salsa
1 cup frozen corn
1/4 cup water
1 onion, chopped fine
1/4 cup bell pepper, chopped
1/2 tbsp. chili powder
1/2 tbsp. garlic powder
1/2 tsp. dried oregano
1/2 tsp. cumin
1 c. reduced fat shredded cheese (cheddar, Mexican blend, whatever)
16 flour tortillas (burrito-size)

Recipe Directions for Brown Bag Burritos

  1. Mash beans with a fork and set aside. (This step could be optional, but I think mashing the beans helps thicken the filling and makes it easier to work with. The original recipe called for refrieds, but I prefer using plain pinto beans - same flavor but less fat and processing.)

  2. Brown ground beef; drain. Add remaining ingredients (except tortillas). Bring to a boil. Reduce heat; cover and simmer for 20 minutes.

  3. Heat 3-4 tortillas at a time. Spoon 1/4 c. beef mixture down the side of each tortilla.

  4. Roll up. Wrap each burrito in a paper towel, then wrap in foil. Refrigerate or freeze.

  5. When ready to eat, remove foil and microwave for about a minute. The paper towel keeps the burritos moist. If you don?t use a microwave, skip the paper towel and just wrap in foil. Then heat burritos in the oven with foil. For a sit down meal they are nice topped with lettuce, cheese, salsa, and sour cream. If you?re eating on the run, though, just grab and go!
