Clear chicken broth with breast meat

Recipe Ingredients for Broth, Chicken

1 pound chicken breast tenders
10 cups water
1 onion, large pieces
3 cloves garlic, roughly chopped
1 medium carrot
1 medium Celery
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1 tsp,+crumbled Bay Leaf
2 tablespoons chives, dried

Recipe Directions for Broth, Chicken

  1. *Use boneless skinless breasts and cut into six 2.75-3oz portions

  2. *Use one whole bay leaf, don't crumble, but if you already did, it's ok :)

  3. roughly chop the onion into big pieces

  4. roughly chop the garlic cloves into big pieces

  5. cut or break the celery into big pieces

  6. cut the carrot into big pieces

  7. Add 10 cups of water to a large pot

  8. Add all ingredients to the pot and bring to the boil

  9. Turn heat down to simmer for about an hour.

  10. Remove the chicken portions and set aside.

  11. Strain the liquid into a large bowl or container. I use a 2-qt glass bowl with a lid for easy fridge storage.

  12. To serve, break up one portion of chicken per 1.5 cups of broth, sprinkle with more chives if desired. Garnish with a melba round if desired (adds a couple calories but not much else).
