Recipe Ingredients for Bronaugh's low fat carrot cake

1 cup all-purpose flour
1 cup whole-wheat flour
2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp allspice
1/4 tsp nutmeg
4 egg whites
1 1/4 cups firmly packed brown sugar
1 cup unsweetened applesauce
1/2 cup Pure Almond Original
1 tsp vanilla extract
8 ounce crushed pineapple, drained
2 cups shredded carrots
1/2 cup raisins
1 tsp ground ginger
2 tsp lemon juice

Recipe Directions for Bronaugh's low fat carrot cake

  1. Add all your wet ingredients and spices together and mix.

  2. In a separate bowl ( I never use 2 bowls) add your dry mix. now mix them together. Please not the Pure Almond Original is just almond milk and the lemon juice added to the recipe is to make it like buttermilk. You could use an egg substitute to make this recipe vegan. You could also add walnut or pecans to this, it would make it higher in fat and protein and raise the total calories per serving.
