Recipe Ingredients for Broiler Veggies

2 large zucchini, cut into 4 pieces each
1 eggplant
1 red bell pepper
6 oz portabello mushrooms, sliced
1 tbsp canola oil
1 tbsp olive oil
1/2 tsp thyme
1/2 tsp chili powder
1 tsp garlic, minced
1 tsp black pepper, coarse ground

Recipe Directions for Broiler Veggies

  1. Combine vegetables with oil, herbs, and spices.

  2. Allow to marinate for at least 1 hour.

  3. Place on baking tray under broiler for 10 minutes.

  4. Serve immediately.
