Wonderfully flavorful and subtle seasoning for salmon. Even frozen salmon is perked up with this treatment. From the EatingWell Cookbook.

Recipe Ingredients for Broiled Salmon with Miso Glaze

20 oz Fish, Salmon, Atlantic, Farmed
2 serving Mirin
2 tbsp Miso
1 tbsp Soy Sauce
1 serving Marie Sharp's Grapefruit Pulp Habanero Pepper Sauce
6 tsp Ginger Root
1 tbsp Sesame Seeds
3 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Broiled Salmon with Miso Glaze

Position oven rack in upper third of oven; preheat broiler. Line a baking pan with foil. Coat foil with cooking spray. Toast sesame seeds in a small dry skillet over medium heat, stirring occasionally, until fragrant (3 to 5 minutes). Set aside. Combine miso, mirin, soy sauce, finely minced ginger, and hot pepper sauce in a small bowl until smooth (I used Marie Sharp's hot sauce, but use whatever hot sauce you like). Place salmon fillets, skin side down (if there is skin) in prepared pan. Brush generously with miso mixture. Broil salmon, 3 to 4 inches from the heat source, until opaque in center (from 5 to 8 minutes, depending on thickness of fillets). Hint: Let residual heat finish cooking by removing from oven just before fish is completely cooked and letting rest for a couple minutes. Transfer salmon to warmed plates and garnish with sesame seeds and chopped scallion.
