Broiled Pork Chop with Thai Curry Stir Fry and Coconut Curry Peanut Sauce

Recipe Ingredients for Broiled Pork Chop with Thai Curry Stir Fry and Coconut Curry Peanut Sauce

1/8 cup sugar
1/8 cup white wine vinegar
1 tsp crushed red pepper
2 tbsp garlic
2 tbsp curry
1 tsp cumin
1/8 cup red onions
1 tbsp coconut oil
1/2 cup coconut milk
1 tbsp peanut butter
1 tbsp olive oil
2 tsp sage
1 tsp ginger powder
2 tbsp chili powder
1/4 cup cilantro
1 cup broccoli
1/2 cup carrots
1/4 cup celery
4 cup Noodles, Chinese, Chow Mein
12 oz Pork, Fresh, Loin, Sirloin (Chops), Boneless

Recipe Directions for Broiled Pork Chop with Thai Curry Stir Fry and Coconut Curry Peanut Sauce

  1. Heat up a sauce pan over medium-low heat. Once hot, add sugar, white wine vinegar, 1 tsp crushed red pepper, 1 tbsp minced garlic and coconut oil. Let simmer until sugar is dissolved. Add the 1 tbsp curry powder, 1 tsp of cumin, stir in. Add peanut butter and stir till it is dissolved and all ingredients have been mixed well. Pull off heat and let cool for 5 minutes. Pour in coconut milk and stir.

  2. Heat stir fry pan over medium heat, put in 1 tbsp minced garlic and onions and let simmer for one minute. Then add the rest of the vegetables except for the sugar peas. Stir fry lightly till you get to the desired softness of vegetables.

  3. Take out your pork chops and season them with 1 tsp sage, 1/2 ginger powder and 1 tbsp chili powder. Let sit for 15 minutes. Best to do this before hand so you're not waiting. Grill or Broil two 6 oz lean pork chops till they reach 160 degrees. Remove from heat and let stand till it is not too hot to the touch. Cut into cubes or chunks whichever you prefer. Heat up skillet and place chunks into skillet over medium heat. Add 2 tbsp sauce mixture and sprinkle your choice of flower over meat. Mix up and keep your eye on it. The sauce will burn if it sits too long but you want to get it to a browned state. Add a few tbsp of water if it is not moist enough or flower isn't dissolving.

  4. Get your favorite asian noodles and cool them up. Follow directions on package of noodles. Throw a 1/4 cup of chopped cilantro, lemon grass and curry powder into the water to add a little flavor.

  5. Assemble in this order: Noodles, Sauce, Vegetables, Meat.
