Broiled Mustard Chicken with Shallot Butter

24 oz Chicken
1 tbsp Olive Oil
0.5 oz Classic Dijon Mustard
4 tbsp chopped Shallots
2 oz Red Wine Vinegar
0.25 cup Butter

Recipe Directions for Broiled Mustard Chicken with Shallot Butter

  1. Consider broiled skinless, boneless chicken breasts. In the recipe here, I simply brushed the tops with a good imported mustard, broiled them on both sides and served them with a hot butter and shallot sauce. The mustard was all that was needed in the way of seasoning.

  3. 4 whole, skinless, boneless chicken breasts (about1.5 lb total weight)

  4. 1 tbsp olive oil

  5. Salt and pepper

  6. 1 tbsp imported mustard such as Dijon

  7. 2 tbsp finely chopped shallots

  8. 1 tbsp red wine vinegar

  9. 1/4 cup butter

  11. Preheat the broiler to high.

  12. Trim the peripheral fat and membranes from the chicken. Cut each breast in half lengthwise.

  13. Brush the bottom of a heatproof dish with the oil. Add the chicken pieces, and turn to coat them with the oil. Sprinkle with salt and pepper and brush the mustard over the chicken.

  14. Place under the broiler about 4 in. from the heat. Let cook about 3 minutes with the door partly open, until the tops are browned and bubbling. Transfer the dish to the bottom rack of the oven and close the door. Let cook 2 minutes.

  15. Turn the breasts mustard side down. Return the dish to the bottom rack of the oven and cook 2 - 3 minutes, then place the dish close to the broiler heat once more and cook 1 minute.

  16. Turn the chicken breasts mustard side up again and place close to the 'heat. Cook 3 minutes, taking care that the pieces are browned but not burned.

  17. While the chicken is cooking, put the shallots, vinegar and 1 tbsp butter in a small saucepan and heat until the mixture starts to simmer.

  18. Cut the remaining butter into pieces. Remove the shallot mixture from the heat and add the pieces of butter all at once, stirring with a wire whisk. When melted, add salt and pepper to taste.

  19. Spoon the shallot butter over the chicken and serve.
