Cajun style catfish, broiled and topped with shrimp dressing

Recipe Ingredients for Broiled Fish Fillets with Seafood Dressing

4 catfish fillets
1 tsp lemon pepper
1 tsp garlic powder
1/2 tsp red pepper
1/2 tsp black pepper
2 tbsp Omega Plus Buttery Spread
2 tbsp chopped fresh parsley
2 tbsp chopped green onion
1/2 lb chopped small shrimp
2 tbsp chicken broth
1 tbsp dry white wine
2 tsp fresh lemon juice

Recipe Directions for Broiled Fish Fillets with Seafood Dressing

  1. Rinse and dry fillets. Season each fillet with lemon pepper, garlic powder, red and back pepper. Set aside.

  2. Melt buttery spread in saucepan. Add 1 tbsp parsley, 1 tsp lemon juice and green onions. Saute 2-3 minutes. Add seasoned shrimp, cook until pink. Add breadcrumbs. Add chicken broth and wine to moisten mixture. Set aside.

  3. Make the sauce by melting 1/4 cup of spread with 1 tsp lemon juice, chopped parsley, minced garlic and set aside.

  4. Place fillets in a foiled lined pan. Broil in preheated broiler 3 minutes. Turn fillets, baste with sauce top with dressing. Serve remaining sauce with the fish.
