3 lime yields Lime Juice
2 tsp Chili Powder
8 oz Boneless, Skinless Thighs
3 cup slices Cucumber
1 serving, raw Cilantro

Recipe Directions for Broiled Chicken Thighs With Pineapple-Cucumber Salad

  1. Heat broiler with rack 4 inches from heat

  2. Combine lime zest(2tB), chili powder, and 2ts salt

  3. Rub chicken with mixture

  4. Turn skin side down

  5. Broil chicken 5 minutes

  6. Flip and broil until skin in crisp (8min)

  7. Meanwhile, combine lime juice, pinapple cucumber and cilantro

  8. Season with salt n pepper
