From The Mediterranean Prescription

Recipe Ingredients for Broiled Chicken

1 tsp Pepper, Black
1 tsp Salt, Table
1/4 cup Olive Oil
1 fl+oz lemon yields Lemon Juice
1 tbsp Vinegar red wine
1 tsp Oregano
2 clove Garlic
2 serving Chicken Breast, with skin & bone

Recipe Directions for Broiled Chicken

  1. In a large bowl combine all ingredients except half of the lemon juice, and marinate in the fridge for 1-2 hours.

  2. Preheat broiler.

  3. Remove the chicken and broil 30 min. on lowest rack until first side is brown. Turn and broil 20 minutes until brown and cooked through.

  4. Remove the skin.

  5. Squeeze remaining lemon juice over and serve with pan juices.
