Traditional Dutch fruit bread made with raisins, currents, apples and candied peel. I've added the craisins as an experiment and it turned out great. The name translates as "brother".

Recipe Ingredients for Broeder

2 tbsp bread machine yeast
5 cups flour
2 large eggs
2 apples
2 1/2 cups milk
1 tsp salt
2 cups raisins
1 cup currants
1 cup craisins
1 cup candied orange peel
1 lb raw bacon

Recipe Directions for Broeder

  1. Mix all ingredients except the bacon. Batter should be thick but not too difficult to stir. As with all yeast dishes, milk should be warmed to room temperature before it is mixed in.

  2. Use a large, heavy pot with fairly straight sides and a lid, cast iron works best. Line the bottom and sides of the pot with the raw bacon, saving some to put on top. Spoon the batter into the pot and spread evenly. Place the last few strips of bacon on top.

  3. Cover the pot and allow the batter to rise until double in size (about 2 hours).

  4. Preheat oven to 325 and cook for 1 hour with the lid on. Remove from oven and flip the Broeder over in the pot. Cook uncovered for another 45 minutes or until the loaf is dry in the center.

  5. Once it is cooked, allow it to stand out of the oven for 10 - 15 minutes before slicing.

  6. Serve with butter and cinnamon sugar
