Recipe Ingredients for Brocolli Soup

3 c brocolli
1/2 c carrot
1/2 c celery
1/4 c onion
1/2 tsp salt
1/4 tsp pepper
1/2 tsp nutmeg
1 c 2% milk
32 oz vegetable broth

Recipe Directions for Brocolli Soup

  1. Cook all veggies except brocolli in the vegetable broth until tender.

  2. Add brocolli and cook until tender. Don't overcook!

  3. Whir mixture in a blender or use an immersible blender and blend until smooth. Return to pot.

  4. Add milk, salt, pepper and nutmeg. Reheat gently.
