When I have too many eggs from my chickens, here is a dish that is easy and quick.

Recipe Ingredients for Brocolli Frittata

6 eggs, large
1 oz (Cabot) 50% Light Cheddar
2 cups brocolli
1 tomato, sliced
1/2 cup onion, sliced
1 tablespoon olive oil
2 tablespoon butter, salted
1/4 cup milk, nonfat, fluid, added vitamin A
2 cloves garlic, sliced

Recipe Directions for Brocolli Frittata

  1. 425 degree oven

  2. beat eggs and set aside

  3. In skillet at medium-low temp, add oil and cook onions until soft in skillet, add all other incredients except butter and eggs. Cook for 4-6 minutes. Add butter to melt, then add eggs. Allow eggs to touch the bottom of the pan. Cook for 4-6 minutes until sides are cooked, and then place in the oven. Bake for 15-20 minutes until golden brown and there is no runny egg.
