The cream comes from the cottage cheese. If you like your soup chunky, blend only half the mixture with all the cottage cheese.

Recipe Ingredients for Brocolli Cream Soup

2 cups celery, chopped
1 cup onion, chopped
10 ounce brocolli, chopped
1 cup 1% cottage cheese
2 cups 1% milk
1 cup chicken broth
1 pepper to taste

Recipe Directions for Brocolli Cream Soup

  1. Combine celery, onion, brocolli and chicken broth.

  2. Bring to boil.

  3. Cover, reduce heat and simmer for 10 minutes or until vegetables are tender.

  4. Place 1/2 of soup mixture and 1/2 of the cottage cheese in blender and blend until smooth.

  5. Place in pan, and repeat with remaining soup mix and cottage cheese.

  6. Add milk and pepper with soup mix in pan.

  7. Heat through, but do not boil.

  8. Makes about 6 cups.
