A quick and easy quiche-type dish. I cut this into serving portions and individual wrap and freeze them. They reheat nicely in the microwave for a quick meal.

Recipe Ingredients for Brocolli-Cottage Bake

16 oz Cottage Cheese Small Curd Lowfat 2% Milkfat
10 oz Broccoli
0.75 cup, shredded Low Fat, Cheddar Or Colby Cheese
6 pieces Piquillo Peppers
4 large Egg, Whole

Recipe Directions for Brocolli-Cottage Bake

  1. Preheat oven to 350 degress.

  2. Mix all ingredients in a bowl until well blended. Pour mixture into a 9" pie pan that has been sprayed with non-stick cooking spray.

  3. Bake for 45 mins or until center is set. Let cool for 10 mins before cutting.
