A slight twist on a Ree Drummond recipe

Recipe Ingredients for Brocolli and Cheese Soup

1 serving Butter Sticks
0.33 cup Wheat Flour, White, All-purpose, Enriched, Bleached
4 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 cup, fluid (yields 2 cups whipped) Cream, Fluid, Heavy Whipping
3 cup, chopped Broccoli
3 cup Fancy Mild Cheddar Shredded Cheese
1/4 tsp Nutmeg
1 dash Salt, Table
1 dash Pepper, Black
1 cup Soup, Chicken Broth

Recipe Directions for Brocolli and Cheese Soup

  1. Melt the butter in a pot over medium heat then sprinkle the flour over the top. Stir to combine then pour in the milk, cream and broth. Add the nutmeg, and then the broccoli, a small dash of salt and plenty of black pepper.

  2. Cover and reduce the heat to low. Simmer until the broccoli is tender, 20 to 30 minutes. Stir in the cheese and allow to melt.

  3. Taste the seasonings and adjust if needed. Then either serve as is, or mash with a potato masher to break up the broccoli a bit, or transfer to a blender in two batches and puree completely. (If you puree in a blender, return the soup to the heat and allow to heat back up. Splash in some chicken broth if needed for thinning.)
