Delicious light way to eat your veggies. Since processed cheese isn't recommended by Prism, I suggest trying cream cheese and a little shredded cheddar to top it off.

Recipe Ingredients for Brocolli Casserole

24 ounces brocolli
8 ounces processed cheese
2 tablespoons Butter
2 slices Whole Wheat Bread

Recipe Directions for Brocolli Casserole

  1. Steam brocolli in microwave until thawed.

  2. Cube Velvetta and add to brocolli.

  3. Return to microwave for about 3 minutes or until cheese is melted. Mix well and place in 8x8 casserole.

  4. Melt two tablespoons butter. Toast the bread and make fine bread crumbs. Mix bread crumbs with butter. Pour over brocolli.

  5. Bake at 350 for about 30 minutes.
