This pesto is made with broccolini (broccoli rabe). serve with bread as a dip or over hot pasta. 1 T = 1 serving.

Recipe Ingredients for Broccolini Pesto

2 T pine nuts, toasted
1 clove garlic
8 ounces broccoli rabe
3 T olive oil
1/4 cup parmesan, grated
3 T vegetable broth, low sodium

Recipe Directions for Broccolini Pesto

  1. Bring pot of salted water to a boil. Blance broccolini for 2-3 minutes. Transfer to a bowl of ice water and let cool for 5 minutes. Drain and squeeze dry.

  2. Toast pine nuts on stove in a dry skillet.

  3. Combine garlic and toasted pine nuts in a food processor and pulse.

  4. Add broccolini and pulse.

  5. Add olive oil in stream through feeder tube on food processor. Add cheese. Add broth to thin out mixture.

  6. Season with salt and pepper
