My own take on a classic. Cheesy Broccoli & Tuna Casserole - Omit the cheese if you like to bring it down a bit in calories, or change up the veggies.

Recipe Ingredients for Broccoli & Tuna Casserole

1 can light tuna
1 can cream of mushroom soup
1/2 cup white onion, diced
2 cups broccoli, chopped
1 cup canned green beans
1/2 cup celery, diced
1 cup carrots, diced
4 cups egg noodles
1/4 cup cheddar cheese, shredded

Recipe Directions for Broccoli & Tuna Casserole

  1. Boil Egg Noodles

  2. Saute vegetables in no-calorie cooking spray

  3. Add Tuna and Soup into vegetables and cook with 1/2 cup of water until heated through

  4. Mix in Noodles and place in a casserole dish

  5. Heat in 350 degree oven for 30 minutes

  6. Top with shredded cheese for last 5 minutes until melted
