Recipe Ingredients for Broccoli-Tofu Stir-fry

3 tbsp hoisin sauce
2/3 cup water
3 tbsp rice vinegar
3 tbsp low sodium soy sauce
1 tbsp cornstarch
2 tbsp vegetable oil
5 garlic cloves, pressed
24 oz extra firm tofu, diced
5 cups broccoli, chopped
70 g sherry
1 red bell pepper, sliced
5 scallions, diced

Recipe Directions for Broccoli-Tofu Stir-fry

  1. Combine the hoisin sauce, water, vinegar, soy sauce, and cornstarch in a small bowl. Before beginning to stir-fry, prepare the vegetables and have all the ingredients at hand.

  2. In a wok or large skillet, heat 2 tbsp of oil on medium-high heat. Add the garlic and stir-fry for 30 seconds before adding the tofu. Continue to stir-fry for 3-4 minutes, until the tofu is lightly browned. Remove the tofu and set it aside. Add another tablespoon of oil to the wok, heat for a few seconds, and add the broccoli. Stir-fry for a minute and pour in the sherry. Stir-fry for 3 minutes. If the broccoli begins to scorch, add a tbsp of water. Add the bell pepper, and continue to stir-fry for a minute, and then the tofu and sauce. Stir carefully and bring to a simmer. Simmer for 3-4 minutes, until the sauce thickens.

  3. Top with peanuts and serve immediately.
