Recipe Ingredients for Broccoli & Tofu in a Spicy Peanut Sauce

1 tbsp canola oil
1 1/2 lb broccoli
1 lb firm tofu
2 cups chopped onion
1 tbsp grated fresh ginger
4 cloves garlic
3/4 tsp salt
2 scallions
3/4 cup peanut butter
3/4 cup water
6 tbsp cider vinegar
3 tbsp soy sauce
3 tbsp molasses
1/4 tsp cayenne pepper

Recipe Directions for Broccoli & Tofu in a Spicy Peanut Sauce

  1. Combine peanut butter with hot water.

  2. Mix in vinegar, soy sauce, molasses, and cayenne pepper.

  3. Separately, break broccoli into small pieces and press tofu in .75" cubes to express water.

  4. Heat oil in a large skillet or wok.

  5. Add onions and cook until soft.

  6. Add broccoli, garlic, ginger, and salt and cook about 5 minutes until the broccoli is bright green.

  7. Add scallions and tofu and cook for a few more minutes.

  8. Add sauce, heat thoroughly, and then serve over rice.
