Quick and easy salad to make - full of protein.

Recipe Ingredients for Broccoli and Tofu Salad

3 cups broccoli, cut into small florets
375 g firm tofu
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
1 tbsp sesame oil
1 tbsp soy sauce, low salt
1/4 cup lemon juice
2 cloves garlic, finely diced
1 tbsp red chili, diced

Recipe Directions for Broccoli and Tofu Salad

  1. cut up broccoli and blanch in boiled water, then drain

  2. cut up tofu

  3. roast seeds on a hot, oil-free pan

  4. combine these ingredients in a bowl

  5. in a separate bowl combine the remaining ingredients and stir

  6. add dressing to broccoli, tofu and seeds
