Broccoli, Sweet Potatoes, and Pears Side Dish

Recipe Ingredients for Broccoli, Sweet Potatoes, and Pears

2 cup chopped broccoli
2 sweet potato, peeled and cut into 1-inch chunks
1 3/10 tablespoons extra-virgin olive oil
2 tablespoon water
2 pears, unpeeled, cut into 2-inch chunks
1/2 teaspoon kosher salt

Recipe Directions for Broccoli, Sweet Potatoes, and Pears

  1. Heat oven to 500 F.

  2. Toss the broccoli and sweet potato with the oil and water in a shallow roasting pan.

  3. Place in the oven and roast 20 minutes, turning occasionally, until browned. Add the pear and roast until the vegetables are tender, about 10 minutes more.

  4. Remove from oven and toss with the salt and pepper.
